One of my favourite Aussie traditions, has got to be baking and eating ANZAC biscuits. This is what I consider to be the best recipe ever! It’s so easy, there’s no need to save it for once a year! These are super easy to whip up whenever you want a delicious treat in a flash.

You will need:
Ingredients – makes 30 biscuits
- 125 g butter, cut into pieces
- 100 g golden syrup
- 1 tsp bicarbonate of soda
- 100 g rolled oats
- 150 g plain flour
- 75 g light brown sugar
- 50 g desiccated coconut (optional)
Preparation
- Preheat oven to 155°C. Line two baking trays with baking paper.
- Place butter and golden syrup into mixing bowl and mix until fully combined.
- Add bicarbonate of soda and mix gently.
- Mix in rolled oats, plain flour, brown sugar and desiccated coconut.
- Place 2 teaspoons of mixture onto prepared baking tray and flatten to approx. 5 cm in diameter. Repeat with remaining mixture (makes approx. 30 biscuits), leaving space inbetween for biscuits to spread during baking.
- Bake for 9-12 minutes (155°C) until golden brown. Remove from oven and allow to cool on trays for 5 minutes. Transfer to a wire rack and allow to cool completely or serve warm.
